Joe discusses the rapid changes needed to evolve from an old fashioned, cash only, 99% dine-in cafe to takeout only, no cash, 100% takeout - and how those changes were made almost overnight. Oh, and he vents about meal delivery services delivering zero profits to small, independent restaurants.
